With mushrooms, red bell peppers, onions, zucchini, and snow peas with roasted cauliflower and chickpeas over quinoa.

Cook the onions and bell peppers down with ginger and garlic and after cooking them down put red curry paste in (but be careful cuz it can be spicy) and cook that with everything for a little and then add cocunut milk to the sauce. If you want the sauce thicker you can add a slurry too.

    Suggestions:

    Add or sub fresh spinach leaves for the snow peas.
    Add 1/2 tsp turmeric to curry paste and lentils to quinoa for a variant with more Indian flair.
    Make red curry paste from scratch http://www.dlcinvestmentsllc.com/red-curry-paste/.
    Add or sub leeks and red shallots for the onions.
